At 00:00 sharp the golden wheel turns. Every guest still at a table or the pass receives a ballot; the winning number takes home the night's prize — a rare dessert flight, a pour of 30-year cognac, or the chef's off-menu plate.
House Rules of the Spin
- Ballots issued with every dessert or digestif order after 22:00.
- One spin nightly — the wheel is sealed and witnessed by the floor manager.
- Prizes may be taken as kitchen credit or casino chips at par value.
- Guests must be present at the call; unclaimed prizes roll to the next evening.

Prohibition theatre,
outback style
When the original 1911 bakery on Todd Mall was converted, the builders found a cold room behind the wine racks — too beautiful to seal. We kept it hidden. The room now holds six seats, a piano that hasn't been tuned since 1954, and the best pour of rye in the Territory.
Entry is by cipher only, changed nightly. Ask your server for the day's hint, watch the bartender's tells, or simply book the Salon Privé and the door opens itself.
Sunset spritzes
over the Todd Mall
The rooftop terrace opens at 17:00 — spritzes, oysters and small plates while the desert sky does its slow work. First-line seats are held for diners who book before 16:00.

Friday and Saturday nights the centre stage hosts a 40-minute cabaret set — velvet vocals, a brass trio and the occasional illusionist — timed to the restaurant's second seating.
- Doors to the stage lounge open at 21:30; dinner guests receive priority seating.
- Premium boxes seat four with a dedicated champagne bucket and sight-line over the pit.
- Sunday sessions feature Territory jazz trios — no cover with a dinner reservation.
