The wheel decides
what you taste
Eight seats around the pass, a brass wheel of seasonal ingredients, and a chef who wagers her own shelf on your guesses — the only menu in the house that is never printed.
Dinner as a
wager
Before each course, chef Amelia Rowe spins the ingredient wheel at the pass. Whatever it lands on — desert lime, wagyu, finger lime, truffle — becomes the plate in front of you.
Guests may call their guess before the reveal. A correct call earns a pour from the chef's private shelf; a miss earns a story and the next spin.
No two services repeat. Dietary notes are taken at booking and the wheel's brackets adapt — the house's one rule is that nothing is announced twice.
Why eight seats
fill nightly
The Brass Wheel
Sixteen seasonal brackets, spun live at the pass — the evening's script.
Chef's Shelf Stakes
Call the ingredient correctly and the chef pours from her private shelf.
No Printed Menu
Nothing is announced before the spin; nothing repeats across services.
Pass-Level Seating
You eat where the kitchen finishes — the plating is the entertainment.
How the
ritual runs
Ninety minutes, seven courses, one wheel — the structure is strict, the outcomes are not.
The Welcome Pour
Seats at the pass, a chilled aperitif, the chef explains tonight's brackets.
Spin & Plate
Each course begins with a spin; guesses are taken, stakes are sipped.
The Chef's Toast
The wheel's final bracket is dessert — and the shelf opens for the lucky.
What the seat
includes
- Seven courses across the pass, sequenced by the wheel.
- Welcome aperitif and water service throughout.
- A guess per course — with chef's shelf pours for correct calls.
- Optional wine pairing, eight pours — A$85 supplement.
- The night's scorecard, stamped and signed.
- Priority booking for the next month's seat.
Ninety minutes,
three acts
Act I — Cold Open
Raw bar brackets and light pours; the wheel warms up slowly.
Act II — The Hearth
Josper brackets, heavier pours, the stakes get serious.
Act III — Sweet Finish
Dessert brackets, the chef's toast, scorecards signed.
Per Seat
A$240 covers the full seven-course arc and the aperitif. The wine pairing (A$85) and chef's shelf stakes are separate; the full table of eight can be bought out privately.

I came for dinner and left convinced the wheel was rigged — in my favour.
