Four private salons, each with its own table, dealer and dining setting. Sessions are application-only; approved guests hold the room for the evening and set their own pace.

The monthly gala turns the whole house to a theme — Bond nights, Monte Carlo evenings, 1920s prohibition balls — with a five-course set menu, an open tournament and the cabaret troupe on stage.

The Alchemist — Cocktail Laboratory
Build your own profile at the lab bench: pick a base (smoky, sweet, dry), choose botanicals from the apothecary shelf and the centrifuge clarifies your creation while you wait.

Recipes are saved to your member profile — order "my usual" at any bar in the house and the lab card follows you. Non-members can run one build per evening for A$45.
The lab also hosts the Sunday mixology masterclass — two hours, three builds, and a certificate nobody expects to be as proud of as they are.
