How Outback Bistro collects, holds and honours guest information — from reservation details to membership ledgers — under the Australian Privacy Act and our own stricter house rules.
What we collect
and why
We collect only what the evening requires: contact details for reservations, identity documents for gaming-floor entry as required by Northern Territory law, dietary notes attached to bookings, and Vault account data for members.
Payment details are processed by our PCI-compliant payment partner and never stored on house systems. CCTV covers public floors for safety and regulatory compliance — it never covers the Salon Privé, cellar dining room or spa garden.

- No guest list is ever sold, shared or published.
Where your details
actually go
Reservation details exist to hold your table and honour your dietary notes — they are visible only to the concierge and the kitchen's pass system.
Vault account records track chip-back, bookings and preferences so your host can greet you correctly. Marketing contact is opt-in only and revocable by a single reply.
Regulatory disclosures happen only where Northern Territory gaming law requires them — suspicious-activity reporting and licence auditing. Nothing else leaves the building.
How long, and
your say
Reservation records are retained for 24 months; gaming-floor ID records for the statutory period set by the licence; Vault ledgers for the life of the membership plus the audit window.
You may request access, correction or deletion of your personal data at any time — write to [email protected] and the desk responds within seven days. Deletion is absolute except where the licence obliges retention.
Access requests are free and answered within seven days — identity verified by the same ID used at booking.
Marketing consent is a toggle, not a trap — opt out once and the ledger respects it permanently.
Built like
the cellar
Guest records live on encrypted systems with role-based access: the concierge sees bookings, the cage sees floats, the committee sees applications. Nobody sees everything.
Physical records — signed vouchers, cage slips — are stored in the vault itself and destroyed on the statutory schedule by certified destruction.
